Cheesy Fiesta Potatoes Recipe

Ingredients

  • Potatoes: 3 large russets, diced
  • Oil: 2-3 tbsp
  • Seasonings: 1 tsp each garlic powder, onion powder, paprika; ½ tsp chili powder; salt and pepper
  • Cheese Sauce: 2 tbsp butter, 2 tbsp flour, 1 cup milk, 1½ cups shredded cheddar cheese
  • Toppings: ½ cup sour cream, chopped green onions

Instructions

  • Prep Potatoes: Dice potatoes, soak in cold water (15 min), then pat dry.
  • Season & Bake: Toss potatoes with oil and seasonings; bake at 425°F for 25-30 minutes, flipping halfway.
  • Make Cheese Sauce: Melt butter, whisk in flour, then slowly add milk. Stir until thickened; add cheese and mix until smooth.
  • Assemble: Top potatoes with cheese sauce, sour cream, and green onions. Serve warm.

Notes

  • For crispier potatoes, use an air fryer.
  • Swap sour cream with Greek yogurt for a lighter option.
