Cottage Cheese Pancakes

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp sugar (optional)
  • Pinch of salt
  • 1/4 cup milk
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a bowl, mix cottage cheese, eggs, and milk until smooth.
  2. In another bowl, whisk flour, baking powder, sugar, and salt.
  3. Combine wet and dry ingredients, mixing until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form, then flip and cook until golden brown.
