- 1 cup cottage cheese
- 2 large eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tbsp sugar (optional)
- Pinch of salt
- 1/4 cup milk
- 1 tsp vanilla extract (optional)
Instructions
- In a bowl, mix cottage cheese, eggs, and milk until smooth.
- In another bowl, whisk flour, baking powder, sugar, and salt.
- Combine wet and dry ingredients, mixing until just combined.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form, then flip and cook until golden brown.
